Potato & Bean Salad
My dear friend Sally gave me this recipe many years ago, and whilst i have deviated slightly from the original, the concept is still the same and this is still one of my all time favourite salads. It never fails to be a hit at a picnic or barbeque!
8 large potatoes (i like the red ones), skin on
1/2 red onion, chopped finely
2 cloves garlic, minced
4 rashers bacon, diced
400g red kidney beans
5 spring onions, sliced
300g sour cream
2 tbsp french salad dressing
Olive oil
Salt & cracked pepper
In a large pot, boil the potatoes until tender, drain and set aside to cool. Meanwhile, fry off the onions, half the spring onions, garlic and bacon in a little olive oil.
Once the potatoes have cooled, chop into bite size pieces and place in a serving bowl. Add the garlic, onion & bacon mix, kidney beans and the remaining spring onions. Lastly, spoon over the sour cream and french dressing, season well with salt and pepper and mix gently to combine all the ingredients.
You can serve this immediately warm, or refrigerate until cold. Delicious!
